Soup for the Soul Soup Sisters and Broth Brothers is a non-profit organization dedicated to warming one heart at a time with a bowl of soup for women, children and youth in need. Following their 2012 best selling success The Soup Sisters Cookbook featuring celebrity chefs and fellow volunteers recipes, we’re excited about their upcoming cookbook featuring seasonal recipes that are easy to cook at home. Submitted by Rogelio Herrera, co-owner and head chef at Alloy in Calgary, we’re confident that his Curried Squash and Coconut soup is bound to warm up anyone on a chilly day. (Look for more great Soup Sisters recipes in our upcoming October issue.)

Curried Squash and Coconut Soup
Ingredients
• 2 large butternut squash
• 4 medium carrots
• 2 white onions
• 1 can of coconut milk (20 oz)
• 1 1⁄2 L chicken stock
• 1 T yellow curry powder
• 1 t paprika
• 1 t red chillies
• 1⁄2 L plain yogurt
• 1⁄4 cup fresh mint
• 1⁄4 cup honey
• Salt to taste
Directions
1. Peel and dice Butternut squash, carrots and onions,
2. On a sauce pan combine all ingredients, bring to a boil and simmer until carrots are soft.
3. Blend the soup mixture until smooth and adjust seasoning.
4. Chop fresh mint and combine with yogurt and honey.
5. Serve the soup hot with a spoon full of minted yogurt
